Rain rain go-away

England, as I have discovered, is full of 2 things. Round-a-bouts and rain!

The never-ending rain over here has got me all nostalgic for summer, which seems like a long long time away at the moment.

The only way to counter the gloomy state of affairs over here is to make a summer berry treat with blueberries from some sunny country on the other side of the world. Well, it’s either that or stick my head in a HUGE tub of ice-cream…which I can say that I am tempted to do given that our heating has gone a bit crazy and refuses to turn off!

This recipe adapted from Allrecipes isn’t dairy-free but Hubs was even willing to overlook that and suffer the consequences! Hehe!
Ingredients (adapted from Allrecipes)
2 cups all-purpose flour
1 cup brown sugar (Allrecipes uses white)
1 teaspoon baking soda
1 teaspoon baking powder
1 (8 ounce) container plain yogurt (Allrecipes uses blueberry flavoured yogurt)
1 egg
1 teaspoon vanilla extract
4 tablespoons butter, melted
2 cups blueberries

Preheat your oven to 175C (or 350F).

Line a 12-cup muffin tray with muffin liners.

Mix the dry ingredients together (flour, sugar, baking powder).

Mix the wet ingredients (yogurt, egg, vanilla extract, butter) and blueberries in another bowl.

Combine mixtures and spoon into muffin tray. Bake for 25 minutes or until cooked.

  1. I love blueberry muffins any day. :)

  2. Blueberry muffin - the first muffin flavor which I made using ready-mix. know...I don't bake. :P
One of those no-fail muffin other than banana and chocolate.

Hope the rain go away too and you can "come out to play" :P

  3. Oh, exactly how I'd like my berry muffins -- fluffy and high risen!

  4. That blueberry muffin looked so good that I want to bake some today. ;)

Remember that all that rain will make beautiful spring flowers for you over there, and it's better than snow (sometimes!). hehe!

  5. Yumm blueberry muffin, beautiful picture also, the weather in here isn't that nice also :(

  6. oh such a lovely muffin and with blueberries, I can't resist not your advancement but those delicious blueberry muffins!

  7. Love the look of your blueberry muffin. Make me crave for some berries muffin!

  8. In owr winter, here, I made the same.
Things that reminds me days like today, sunny bright, whit a perfect temperature. Your berry muffins looks absolutely gorgeous and delicious

  9. Hahaha, give me 5!! When I first arrived here, I told my husband, "Your country is so backwards! Roundabouts are obsolete. Traffic lights is the way to go! Nothing but rain, rain, rain!"

I think I said it once too many times until he turned a deaf ear! Silly small roundabout in the middle of nowhere, medium roundabouts, big roundabouts.

Do you find that some of these English drivers actually don't bother to go around the roundabout when it is too small? The actually drive over the roundabout! That says it all!

Oops, .... I had better stop here! :)

  10. What a coincedence, even I post blueberry muffins recently. But it was not raining here, its raining snow here o_o

    Nice looking muffins, fully raisen

  12. I love muffins but I can't get them right for the life of me. Why? I don't know. Funnily I can bake a cake but not muffins. Beats me.

London sounds very much like Nantes, France. ;)

  13. yumyum! Blueberry muffins r such feel-good food. ;)

  14. those blueberries look plump! :D yummy.

  21. I've only had the store made versions of blueberry muffin (and I'm a rubbish baker) Gotta try your recipe one day though. P.S: glad to find a fellow blogger who currently resides in 'sunny' England.

  22. Hey, how are you doing? Hope the weather is better now.
I made blueberry muffins today from Padma's recipe using thawed blueberries but I replaced the buttermilk with yoghurt, like in your recipe. There was also a bit of powdered cinnamon, which added flavour. ^_^

  23. Blueberry muffins definitely bring in some summer sunshine on a rainy day. I feel very lucky to be able to get blueberries year round in Southern California. But so many of my friends in other parts of the world don't. :(

  24. Singairishgirl: Me too!

Tigerfish: I can’t wait to come out and play!

Argus: Me too – I need to stop eating too much! I’ll have to try Padma’s recipe next weekend!

EastMeetsWestKitchen: Did you end up making muffins? You know, I actually prefer snow to rain – so much prettier!

Everything4Sweets: Well, only a few more months of winter to go

BigBoysOven: I can’t resist anytype of muffin!

LittleCornerofMine: Hope you managed to satisfy your cravings!

Sylvia: Glad to hear that you’re getting some good weather!

Judy: Hehe – yep, I totally agree! It’s overkill with the roundabouts over here! I think I go through about 15 or so on my way to work everyday! I used to have a bad habit of driving through some as well – only because I didn’t notice them – you know, the ones that are just painted on the ground.

Padma: Oooo – I’ll have to check out your blueberry muffins too – great minds think alike!

    Shannon: Thanks for dropping by.

CookingNinja: Hehe – try putting your cake mixture into a muffin pan – voila – muffins! Hehe.

    Daphne: Yep – mmmmmm.

BuddingCook: They were plump – can’t wait to make more.

Lynn: So do big slabs of chocolate!! Hehe.

Alexandra: Thanks for dropping by too!

Hedgehog: I’m not a great baker too and I can’t follow recipes either – hehe – I tend to skip lines!

  25. These look delish! However, I'm really wantin' the ice cream right now. A friend took me out yesterday, and I had a Pumpkin Pie Blizzard from DQ! Sadly, I haven't thought of anything since~even with a house full of Super Bowl snacks! (((((HUGS))))) sandi~clicked over from Grandmother Stories
