Once you start, you just can’t stop!

I had a craving for these but didn’t have the exact ingredients in the pantry.  No milk chocolate, no dark chocolate just white chocolate!  Hence, white chocolate rocky road it was.  Craving satisfied.






White chocolate rocky road (based on Nigella Lawson's How to be a domestic goddess)
300g white chocolate
70-80g walnuts (chopped)
70g mini-marshmallows

1.
Gently melt the white chocolate over boiling water or if you’re like me, the lazy way by heating it directly on the stove (pretend I didn't say that!).
2. When the chocolate is melted, mix in the chopped walnuts and mini-marshmallows.

3. Place spoonfuls of the mixture on a baking tray lined with greaseproof baking paper.
4. Wait for little bites to harden.

The white chocolate rocky road was quite a bit sweeter than the original version but had a lovely condensed milk flavour to it.  Time to start that diet again!

Note: This made about 2 full trays of rocky road. I found that the white chocolate took a lot longer to harden than the milk chocolate/dark chocolate mixture.  I ended up putting 1 tray in the fridge as I was getting a bit impatient.

  4. Nigella Lawson Strikes again! Tee Hee! You'd be crazy if i said, I've never had rocky road in actual rocky road form. I've had them in ice creams but not in cakes or snacks like yours. Send a piece for me to try?
