Rain rain go-away

England, as I have discovered, is full of 2 things. Round-a-bouts and rain!

The never-ending rain over here has got me all nostalgic for summer, which seems like a long long time away at the moment.

The only way to counter the gloomy state of affairs over here is to make a summer berry treat with blueberries from some sunny country on the other side of the world. Well, it’s either that or stick my head in a HUGE tub of ice-cream…which I can say that I am tempted to do given that our heating has gone a bit crazy and refuses to turn off!

This recipe adapted from Allrecipes isn’t dairy-free but Hubs was even willing to overlook that and suffer the consequences! Hehe!
Ingredients (adapted from Allrecipes)
2 cups all-purpose flour
1 cup brown sugar (Allrecipes uses white)
1 teaspoon baking soda
1 teaspoon baking powder
1 (8 ounce) container plain yogurt (Allrecipes uses blueberry flavoured yogurt)
1 egg
1 teaspoon vanilla extract
4 tablespoons butter, melted
2 cups blueberries

Preheat your oven to 175C (or 350F).

Line a 12-cup muffin tray with muffin liners.

Mix the dry ingredients together (flour, sugar, baking powder).

Mix the wet ingredients (yogurt, egg, vanilla extract, butter) and blueberries in another bowl.

Combine mixtures and spoon into muffin tray. Bake for 25 minutes or until cooked.

  2. Blueberry muffin - the first muffin flavor which I made using ready-mix. Hahhaha...you know...I don't bake. :P
    One of those no-fail muffin other than banana and chocolate.

    Hope the rain go away too and you can "come out to play" :P

    Remember that all that rain will make beautiful spring flowers for you over there, and it's better than snow (sometimes!). hehe!

    Things that reminds me days like today, sunny bright, whit a perfect temperature. Your berry muffins looks absolutely gorgeous and delicious

  9. Hahaha, give me 5!! When I first arrived here, I told my husband, "Your country is so backwards! Roundabouts are obsolete. Traffic lights is the way to go! Nothing but rain, rain, rain!"

    I think I said it once too many times until he turned a deaf ear! Silly small roundabout in the middle of nowhere, medium roundabouts, big roundabouts.

    Do you find that some of these English drivers actually don't bother to go around the roundabout when it is too small? The actually drive over the roundabout! That says it all!

  12. I love muffins but I can't get them right for the life of me. Why? I don't know. Funnily I can bake a cake but not muffins. Beats me.

    I made blueberry muffins today from Padma's recipe using thawed blueberries but I replaced the buttermilk with yoghurt, like in your recipe. There was also a bit of powdered cinnamon, which added flavour. ^_^

  23. Blueberry muffins definitely bring in some summer sunshine on a rainy day. I feel very lucky to be able to get blueberries year round in Southern California. But so many of my friends in other parts of the world don't. :(
